Tonight I pulled samples from the three batches I brewed this past Labor Day weekend. I am really pleased with how all three are coming along... It's going to be a sopping wet autumn!
ElderBerry Wine
The nose is... wow! Well, it's like raw fruit wine, but it's smooth and very berry. Almost zinfandel-like. The taste is zippy from the yeast, but it's got a definite zinfandel character. Big blueberries. A velvety structure is developing. Very promising indeed.
The starting specific gravity was 1.080, and tonight it's reading 0.990, which I didn't think was possible. How can this stuff be less dense than water? Anyway, the math figures to 12.1% alc/vol.
Blueberry Melomel
The nose has clean slate, reminiscent of cabernet franc. The taste is, of course, yeasty, but it tastes like blueberry pancake syrup. Specific gravity is down from 1.110 to 0.996, which figures to a whopping 15.5% alc/vol. It's right on track with an observation from the original brewing notes... This stuff is going to be sweet death.
Elderflower Metheglyn
This stuff hasn't even been racked yet (something I need to attend to very soon).
The nose is floral and somewhat citrusy. Although still raw, the flavor profile is sweet and delicately floral.
This stuff has apparently done hardly anything, going from 1.120 specific gravity to 1.100, which is only 2.5%. Hmmm.
