Got a favorite family, or cookbook meatloaf recipe? Please please please post here. I am hungry for meatloaf, and off to call my Mom for the recipe she always made.
Also, I have a theory. No two families make meatloaf the same way.
Any scaling-down hints, while we're at it? Since we're looking at solo eating.
help me,
recipe: meat

I always make my meatloafs in mini pans. It doesn't help you make LESS-- but it makes it a lot more freezable (also it cooks quicker).

Tonight's meatloaf hodgepodge, thanks to my mom "umm, I don't really use a recipe" and ground turkey on sale.
Mix together:
1 egg
1/2 cup bread crumbs
a splash of milk
various seasonings- Oregano, garlic powder, dried parsley
1/2 small onion, finely chopped
a little splash of liquid smoke
--- until "it looks like oatmeal" says Mom. thick but still vaguely liquidy and not crumbly.
Then add the meat, a little at a time, by hand. Squishy!
Form resultant mass into long, skinny loaf in the middle of a glass pan. (Easier cleanup, says Mom)
Sauce- ketchup and brown sugar, slathered over. I added another shot of liquid smoke.
Notes for next time I do turkey meatloaf: I am totally, totally adding a little bit of chopped cooked spinach. About 1/3 cup or so. And going to try it with the Parmesan suggested above, and marinara instead of my sauce.
1.25 lb of ground turkey
