My mint plant is getting so big I'm going to start charging it rent and ask it for help with the cable bill. But a girl with a day job can only drink so many mojitos/juleps during the work week.
What have you got for tasty uses for fresh mint? Foods, beverages, cheap, easy and suited for one.

Couscous Salad:
1 box couscous, prepared according to box directions
1/2 cup each finely choopped carrots and cucumbers (or celery, or cherry tomatos)
2 tsps ground cumin
2 T chopped fresh mint
2 T chopped fresh parsley (or 1 T dried)
3 T olive oil (+ more for your hands)
1/4 cup lemon juice
1 tsp turmeric
Prepare the couscous. When it's cool enough to touch, rub your fingers with olive oil and break up any lumps. Mix the couscous with the carrots, cucumbers, cumin, mint and parsley. Mix the olive oil, lemon juice and turmeric to make a dressing, then drizzle that on the salad and toss to coat. Serve warm or cold.

To make:
Wash the mint and pat dry with a towel. Dip the leaves in egg white (one egg white will go a long way, as the leaves should just be lightly coated). Dip the leaves in granulated sugar until they are well coated. Sometimes it's easier to kind of sprinkle the sugar instead of dipping, but be sure to get both sides.
Lay the leaves out on wax paper. It's easiest if the sheet is on a cookie sheet. Leave in a warm, dry place (not hot like in an oven) until the mint is dry and crunchy. This took 2-3 days where I used to live when I was a kid, but I imagine it could vary pretty dramatically depending upon climate and air flow.
This makes a lovely garnish for cake or fruit salad, and is especially nice for an afternoon tea. Because it's simple, easy, and yet pretty and delicious, it can make a simple dessert feel really

They put it in some mighty tasty and spicy (hoo mama) dishes, which you can do meatless or meat-filled. You will get up from the table having been sufficiently garlicked to keep away vampires, sweating from the chili like you've run a marathon, but with fresh minty breath that'll make you think you already brushed. ;)
