I'm massively in love with dairy and I'm trying to basically eliminate all cow products from my diet, focusing on beans and poultry.  In particular, I'm especially interested in bean/lentil recipes, not including garbanzo, that are quick and easy, and include little or no tomato.  I love soups.  I've looked at some recipe books, but thought that ( Read more... )

I adore dal; it's a once-a-week staple now. At the Indian grocery it's ridiculously cheap, and one cup of dry dal makes between two and three servings. It's not particularly quick (takes about an hour to hour and a half if you don't have a pressure cooker) but it's really easy and very flexible; add or remove ingredients as you see fit. The recipe there for mung dal with black mustard seed is my favorite; I throw in a couple cloves of garlic and use the kind with the hulls still in.

I always get confused by dal. It's a general term for several kinds of beans and peas, right? There's not a lot of Indian stuff here, but I know my mom has read and studied a lot related to Indian food and health, so I'll have to bring it up next time we talk.

Yep, dal is variously either the beans themselves (mung dal, toor dal, chana dal...) or the tasty soup or stew made out of them. There's a reasonable number of dal recipes for red lentils or chickpeas, too, if you don't have good access to an Indian grocery (although if you have any access at all, it's worth it to get your spices there; $2 for a giant bag of turmeric vs $2 for a tiny spice jar full, for example.)

Alas, no Indian grocery here. The closest we have is a good but smallish health food store, but I'll poke around there, and perhaps shop when on a trip or something.
