Maple Bacon Toast Cups

Recently I saw this breakfast recipe on the cover of a BH&G magazine. Instead of shelling out money for it; I thought I could find it online. And I did! I recently made it last week while snowed in.

Maple Bacon Toast Cups
Serves 2-3 people

Ingredients
1 1/2 Tbls butter, melted
1 1/2 Tbls maple syrup, don't fake it
6 slices of bread with crusts cut off
3 slices cooked bacon, ready-made ok
6 eggs
6 pieces thin sliced cheese, any type, optional
extra syrup optional

Equipment
6 cup muffin tin, or 6 ramekins
rolling pin, or saran wrap and the palm of your hand
pastry brush

Directions
1. Preheat oven to 400, butter the cups.
2. Combine maple syrup and melted butter.
3. Cut off crusts from the bread slices, and flatten with a rolling pin. Brush both sides with the butter/maple mixture, and stuff down inside the muffin cup.
4. Put half a slice of bacon in each cup, then crack an egg over it.
5. Bake until eggs are set, start checking after about 5 min, but if using individual ramekins it's more like 15 min.
7. A thin slice of cheese added on top at the last minute really works.
6. Serve with extra syrup.

Notes and variations
My sweetie prefers scrambled eggs, so I do that instead.
Last time I made this, I forgot to flatten the bread. This made it harder to line the cups, there was less room for egg, and the edges ended up super crispy. Still tasted good, though.
I usually make enough for leftovers; they aren't nearly so good as fresh, but I just drizzle more syrup over them.
This recipe gets very messy if you try to scale it up more than three times.
Don't try this with uncooked bacon. It doesn't work, believe me.
If you don't have real maple syrup, well okay, but you're missing out.
Oh, and save the bread crusts! I make bread pudding out of 'em.
