Трудно узнать, но на самом деле это зеленый борщ :) Да-да, я не дальтоник :) Просто буряк был сильно красным, видимо салатным, вот он и окрасил мой зеленый борщик в красный томатный цвет. А томатов там вовсе и нет.
Бульон сборный - курица, говядина, свинина.
People asked me how to prepare it so I decided to write recipe:
1 beetroot
2 carrots
2 onions
1/2 kg potatoes
sorrel (bunch)
spring onion
parsley, dill, garlic, paprika,
hard boiled egg
sourcream
vegetable oil
beef brisket with bone 400 gr
1/2 of chicken
pork sirloin 400 gr
(You can get any kind of these meat in any quantity, I put three together, and boiled them different time. The more meat the tastier borsch. First I put into the saucepan beef, then (after water get boiled) I get it out and wash in order to put the skim off. Then put it into the big saucepan (6,5l), pure much water and boil for 1/2 hour, then did the same with pork, and later with chicken. These kind of meat takes different time to get ready.
After approx. 1,5 hour I put chiken from the broth (it's ready). Broth is 2/3 of saucepan. Peel 1/2 kg of potato, cut them to smal pieces (or cubes 2-3 sm) and put into the broth.
Preheat frying pan, put some vegetable oil (sunflower), and fry 2 grated carrots and 2 chopped onions. Then put them into the broth. After this fry 1 grated beetroot (I put red one but if you have white or pink it would be better because the authentic colour of this borsch should be green). Put fried beetroot into the broth which is continuing to boil on the small fire. You can also put chopped paprika, I forgot to put it :)
When your vegetables become ready put into broth cut sorrel (one bunch), cut spring onion, and spices (black pepper, bay leaf, dried paprika, dried selery, etc.) and salt. You can also return chicken into the broth and make it boil but you can also leave it and put into the each plate.
Now your borsch is ready but you need to serve it correctly. You need hard-boiled egg (chop it into the 4 parts or more fine) , chopped spring onion, chopped parsley, chopped dill, chopped garlic. Put these mix into the small bowl in order everyone could put it into his turren by himself. Now you can put borsch into the tureens and offer everyone to put sourcream and egg-greens-mix into it. Offer dark breed or pampushki with garlic. Enjoy :)
