How tall are you? The maximum healthy weight loss rate is two pounds per week. But seeing as how you are most likely not significantly overweight to begin with, I caution you that you might not end up losing weight that quickly (maybe at first, but it usually slows waaay down). I'm 5'2.5" and I've been 114 pounds for at least a month (I lost seven pounds over the summer and it was hard as hell).
My advice would be to lower your expectations a bit so you won't be disappointed. I know that if I set a super-high goal and don't achieve it, I get really upset with myself and end up backtracking even more. It might not work that way for you, that's just how my mind works. I'd suggest setting a goal of maybe a pound per week, and if you lose more, so much the better! I just know that the smaller you are, the harder weight loss is. I've been trying to lose two pounds for the past month. The. Scale. Won't. Budge. ::sigh::
Often times, when you start a new exercise regimen, your body tries to trick you into eating more. Just be mindful if you're hungry or not when you're eating. It usually is just thirst. Good luck!
I'd begin slowly, as you mentioned, and work up to things gradually. I couldn't fun a full mile when I first started out around two years ago, and now I can run 6 miles in just under 50 minutes. I'm not sure if you plan on transitioning into running at some point, but I'd recommend doing intervals...walking for 2 mins, running for one, etc., until you build up your endurance. You also dont want to break into too much running at once because you'll be at an increased risk for injury.
