The little fella and I were watching The Empire Strikes Back earlier, and Vader had just amputated Luke's hand.

"Daddy, will his hand grow back?"
"No pal, that's not how it works."
"If you put a seed in it will his hand grow back?"

That's a very evocative phrase, like it.

Probably because a)the zeitgeist at the time was for cybernetics (Six Million Dollar Man etc) and b)the symbolism of the cybernetic right hand was important in part 3 - Luke's severing his father's hand is what pulls him back from going full Dark Side.
