I know you mentioned the cake class before...are you taking Wilton? I'm toying with the idea of being an instructor. I enjoyed all three courses so much, and have taken two additional specialty courses as well. It's a lot of work, though, isn't it?
Yep - I like it, though I think they throw in so much in 4 weeks. We're always so rushed. I've done two projects outside of class and have found those to be so much more fun.
I wish I hadn't taken the class in the midst of birthday mayhem, though. Way too much going on, and there's so much to do for class. Next week, I have both the kids cakes to make, cupcakes for preschool, plus the royal icing and color flow icing, which as you know, needs to be done the day of class. Ugh. Hard with kids!
You can make the royal and color flow ahead of time! I make mine 2-4 days ahead. When I put it in the tupperware, I cover it with saran wrap, so the wrap is actually touching and covering every exposed part of the icing. Then put the airtight lid on and you're good to go. Just make sure you mix it well before you put into the bags!
