I always have this feeling in the back on my mind that i need to leave this state for a while and try to work for some bigger places more focus don techniques and better cooking credentials. It sounds like you already have your decision made, about leaving that is. I wish you the best of luck, Chris. You have passion and should be proud of everything that you've accomplished so far. Portland is such a tiny city. Moving to Chicago made me realize how many opportunities there are in the big cities, so it is exciting to hear that you are thinking of moving to Vegas. You still are young and have your whole life ahead of you, so April is right to be thinking positive.

I think you should go for it. Even if it doesn't result in a job right away, it'll be a good change. And that in itself will open up a brand new world of opportunities. You never know where you'll end up, especially in Vegas. It's a world famous city that has millions of national and international tourists every year. There's so much business there and some good room to start somewhere nice and be catapulted to greater heights. Not to say that you couldn't find that in Portland either, but if history is doomed to repeat itself, then maybe it's time to find a new course. You know? You're an amazing person, and I remember you cooking some major bomb ass food. Ever since I've known you, you have always been so motivated to advance in your culinary career. I think you need something like this.
