Well, I'll tell ya what I had for lunch yesterday on the good ol' state of Missouri. I had a pizza sandwich (not on the menu) from Jersey Mike's. It's Jersey Mike's that makes me thankful for moving from Kansas City to Topeka

Haven't taken any yet... Bought it about 2 weeks ago and didn't bother to remove the windshield until last week and the first REALLY nice day will be tomorrow, so I'll try for some then. More than likely I'm gonna put new (louder) straight pipes on, possibly new handlebars... fabricate some highway pegs (there's no real good place to put'em on the bike) and maybe even redo the seat and rear fender. None of it is a necessity, but it would be nice... Saddle bags are in the works, and I need to get some mesh net bungies so I can put a bag on the back for long travel.
Nice note is the fact that its a Ninja engine, six-speed... so the thing has some balls ;)
My advice: Get more seat time on it than modding time. Those of us who have winters only get so much of a riding season. The modifications that you'll be doing aren't necessarily going to add resale value to the bike.
I'm not intending to talk you out of it. Just a suggestion from one motorcyclist to another. ;)

1995 Kawasaki Vulcan 500EN ... Paid 1350 and it had 3700 miles on it in MINT condition... bike is soooo sweet. Next year, sportsbike <3
