I wondered when I first saw the film, about Rose and Jack taking turns lying on the door as well. Then I figured if they both did that, then both might end up dead with the water being so cold. In a way this may answer the first question about 'not' saying the words he loved her. By choosing being the one to die it is a statement of his love to Rose, unsaid.
My two cents :)

I thought that too, if they took turns on the door that they both would've died. The way you interpreted it works out to make the story even more beautiful than it already is.
