About your rant - yes, I can definitely see your point. On the other hand, 15-16 year old boys who are extremely good looking, rich, intelligent and popular are also very stuck up and take girls' attentions for granted. When I read the Pensieve scene, this is what came to my mind. And the fact that he didn't get married can be supported both by your theory and also by the fact that he hadn't found the perfect girl. Of course, the perfect boy had always been by his side :-}
We haven't heard anything at all after the Pensieve scene until Harry meets Sirius. There could have been a girlfriend at some point. I just don't see how Harry would be informed of that fact: the interactions between Harry and Sirius aren't that personal. The most intimate they get is when Sirius talks about running away from home.
Anyway, this is the beauty of it all - it's so open-ended that all theories make sense, right?
BTW, your take on Harry is dead-on.

But the other thing I find conspicuous is that Remus and Sirius are the only major characters for which there's no mention of sexual orientation. For every other character, some mention is made in passing (Dumbledore blushes when Pomfrey tells him he has nice earmuffs, Neville asks Hermione to the Yule ball, Draco goes with Pansy, Mad-Eye dances with Prof. Sinistra, Bill and Fleur, the twins and Angelina/Katie/Alicia, Percy and Penelope, etc.). Sirius and Remus are very important characters in the story, but they are the only ones for whom nothing is mentioned...ever. It might not mean anything, but just thought I'd point that out. ;)

Maybe we'll know more in a week. I adore R/S, but I am very skeptical about saying it's canon. I don't care if it, actually. JKR may come up with a Mrs. Remus Lupin next week or in Book Seven and I will still slash the two. James/Lily is canon and James is slashed like crazy (including by me, so...).
I tend to prefer bi!Sirius and gay!Remus. I even have written straight!Sirius and gay!Remus, but have absolutely nothing against your theory. Quite the opposite. Hey, I have written gay!both of them, too, although only sporadically.

It was the night of the full, remember, and right before sun down. He was most likely trying to get back to his office quickly to change, and wouldn't have had time to waste with Trelawney and her fortune telling.
