My Mango Salsa
based on what I had in my cabinet

1/2 ripe mango, 1/4 inch dice
equal amount (>1/4 cup) red onion small dice
1/4 green pepper small dice
1 T champagne vinegar
pepper
salt, yes kosher salt
2 T EVOO
splash worsteshire
scissor in a BUNCH of cilantro

Yum!
