No advice on what vegetarian products you can eat, but I'm happy you're going vegan. Also, I can tell you how to veganize pretty much anything (including cheesecake), so you wont be missing anything. :)

There's two communities I've been following that are great for this sort of thing. vegancooking and cheapvegan, you'll find all kinds of recipes and ways of veganizing things you never thought of. One of my faves is substituting bananas for eggs in baking. Damn find cookies. Cheese is something I've had to give up as my stomach will no longer tolerate it. I have a recipe for a super easy cheesecake that tastes awesome and has no cheese at all!
Before you give it up, go down to Fenton's in the Forks and get tiny amounts of all the cheeses they have. There's some pretty good ones.
Whipped cream is one of those dairy things you just can't substitute. Make a fruit flan!

Also, you should play more Animal Crossing. I'm supposed to catch a cricket in your town, and if you catch one in mine you get cool stuff.

I looked up Cool Whip out of curiosity to see if it's vegan (it isn't) and got linked to this, have you heard of this/tried this? I'm not vegetarian/vegan but I'm always interested in reducing meat and dairy.

That sounds good, I've never heard of it, but it's too bad, I'm deathly allergic to nuts.

What are you Charlie from Always sunny where you eat cheese when you're nervous? What "IS" too much cheese? If you enjoy it so much why are you giving it up? Can you not get organic non chemical free range cheese? does that exist?
