Hey guys. This is going to be a fairly quick post. I just wanted to write a little bit about a dish I made a few nights ago. It's fairly quick and simple and it's a good way to get rid of that extra ground turkey you have leftover after making those
Stuffed Peppers I blogged about previously.
Before I begin, I want to remind everyone that the measurements I'm listing below are when I'm working with half a pound of turkey (what I usually have left after peppers). When I made the recipe in the pictures, I used a full pound and doubled everything.
So I start this very not-fancy recipe by sizzling two cloves of garlic in about a tablespoon of olive oil. Then I dump in a teaspoon of dried basil, a teaspoon of Italian seasoning and a teaspoon of salt (depending on how much you like). Oh and a pinch of black pepper if you like. Sometimes I forget the pepper and that's ok.
Don't wait too long after this to move on to the next step, because the pan is hot and the herbs soak up a lot of the oil. This is when I dump in a can of Hunt's tomato sauce and stir everything together, and then spoon in the already browned turkey meat. Yum!
Now at some point in the process, you'll have pasta going. I used rotini (the corkscrew shaped pasta) the first time, because that's what I grabbed first, and I really liked it. Plus it looks nice and it's fun to eat. However, this time I had to add a bit of rigatoni because I ran out of the other kind. I use about a cup of dry pasta (remember, in the pictures that measurement is doubled, which is why it looks like so much more).
Once the pasta is done, I spoon it right into the sauce (the way they do on all the cooking shows).
Then I stir everything together. Doesn't that look nice?
Once everything is all mixed, I sprinkle a good quantity of grated parmesan cheese over the top (you gotta get enough to evenly disperse throughout), and mix that in as well.

This is a great meal for Tupperware leftovers and it's pretty simple. It's no Mom's Spaghetti Sauce, but it's good in a pinch and the turkey really does something to it that I really like.
