I'm cooking a lot of old favourites and a few new recipes but just haven't had the enthusiasm to post much over the last five or six months.

Today I made a baked Japanese rice casserole called doria so I decided to share the results.

I have never heard of this dish, it looks rich and yummy!

I was planning to make pavlova for friends tonight, and picked up some beautiful fresh local fruit for it - then the grocery store didn't have any meringue nests! I'm at a loss for a light and fresh but impressive dessert... Maybe substitute pound cake for the meringue? What do you suggest? I don't have time to bake anything up at this point!

Definitely yummy.

I'm sorry about the lack of meringue nests. Something like a trifle with diced up pound cake and instant pudding might work too. IF you had the pudding in your pantry.

This is definitely one for me and Mr Psmith -- all our favorite things!! Interesting that it's Japanese, though. I don't think of Japanese cooking as using bechamel. Or casseroles, for that matter. No doubt a failure of imagination on my part ;)

The dish is one of a group of yoshoku (western influence) dishes in Japanese cuisine. It's commonly served at kissaten or tea shops.

Other such dishes served in kissaten include pasta gratins and the 'famous' spaghetti napoliran (napolitan) which is a ketchup flavoured pasta with sliced green peppers in it. The dish is found in convenience stores served in a hot dog type bun.
