Duck Breast

I haven't been cooking anything particularly post-worthy recently. Maybe the duck breast I made yesterday. So, I'm just going to post a quick picture.

I ended up with some duck cracklings for snacking and rendered fat for future veggie cooking so that was a win.

Thank you. I was very happy about the results. Perfectly seasoned too.

On the not so good part ... I ended up knocking over the small container of rendered fat during the 2nd draining. Mainly for having to mop it all up from the stove top.

It was about 2-3 tbsp, at most. I got over a cup of clean white rendered duck fat from the trimmings and the rest of the duck so it wasn't a big deal. And the duck cracklings were delicious. I sprinkled some salt over them and gobbled them up. Pretty good deal for a $16 duck. :)
