Looks delicious! I'm impressed that you did so much - it's really easy to feel like it's not worth the effort when it's just for yourself - but you deserve yummy turkey!

Turkey tetrazzini is on the menu (mix together cooked pasta, canned cream of mushroom soup, frozen peas, diced turkey and shredded cheddar topping, then bake). I have 2 servings of cooked large pasta shells in the fridge which will make it all even easier. :)
The last few years (prior to last year) my friend G would make this wild rice dish for Thanksgiving - and I would get some leftovers to bring home. Added with chicken stock, veggies, and some chicken or turkey - it made a MOST delicious soup!
This year I'm not sure if we will do Thanksgiving or not, and if we do, G won't be there, since he and T are split - so I am going to have to figure out some other chicken and wild rice soup recipe :D

It's sad to lose the people that were part of our happy extended family gatherings but it makes the memories that much sweeter.
