There really isn't too much to do directly in Bethel. Putnam Park (good history of the civil war) and Huntington Park (beautiful scenery and nice walking trails) are really nice, but by then it may be too cold to really enjoy them. The best part of Bethel is the downtown area; there are many cute, quaint shops and restaurants that everyone in the town continuously recommends. Mostly if you haven't been in the northeast and have the time I recommend going to NYC for entertainment as Bethel and the surrounding towns are lacking. The train goes from Bethel to NYC and obviously there are a lot more options there.
