And I don't know if you're also including nonfiction apocolypse stuff, but "The World Without Us" might be a good resource. It goes into the science of what would happen to the planet if humans disappeared, or even if just most of them did. Like, the subway systems would all fill with water, pavement would be reclaimed by jungle surprisingly quickly, and old stone buildings (ex. banks, museums) would outlast pretty must all other human construction. Interesting stuff: http://www.amazon.com/World-Without-Us-Alan-Weisman/dp/0312427905/ref=sr_1_1?ie=UTF8&s=books&qid=
Into the Forest looks fantastic, I just added it to the neverending Amazon wishlist.
I've read The World Without Us, I'm always comparing what happens in the movies to it to see how accurate the movies are (big surprise: they usually aren't very). Thanks for the suggestions!

In the "Humanity-Induced Distruction" category, there's also Into the Forest: http://www.amazon.com/Into-Forest-Jean-Hegland/dp/0553379615

On the subject though, check this video out from The Onion News Network. I thought it was pretty much hilarious.
