If you're looking for software, remember that Blender is free and relatively full featured, and there's a lot of tutorials out there for how to use it.
Also, if you're looking for a polygon/subdivision surface modeller that's easy to use, has an awesome workflow, and is cheap, I highly recommend checking out Silo3D, which can be found at http://www.nevercenter.com
only 159 bucks! Even includes some UV unwrapping and texturing tools, but there's debate to how useful they are. You can also then export the models and bring them into blender for texturing, rigging, animation, rendering, whatever!
I know! Ive been playing around with Blender, but is hard as hell. It does look pretty powerful, but the interface is not very intuitive :P Ill try silo :)
Silo has a free 30 day full featured trial, and (at least there used to be) some good video tutorials on the site for getting starting with the whole paradigm of "edge-loop" based polygon modelling.
The new version also has displacement painting and the like!
