I go to Vegas periodically for work, usually staying on the strip. I dislike gambling and the vibe of the strip (excess in excess), therefore I personally don't enjoy being there. That said, I've had some good times anyway: I recommend buying tickets to a show (Cirque du Soleil especially!) as they tend to be excellent, and maybe have a short list of restaurants you want to try out - I've had some truly excellent meals there! And maybe indulge in some hanging out by a pool if you have the luxury of time to do so.
I stayed at Mandalay Bay - actually, funny story, I got "upgraded" to THEhotel against my will (and they conveniently upgraded the nightly rate but then it got resolved) and it was basically a "king suite" the size of a small apartment. :) I've stayed at Mandalay before, but it's not my favorite.
Three days/nights in Vegas is about the ideal amount for me. :) I've gone for longer and survived by going off the strip to Red Rock Canyon. I'm half-dreading, half-yearning for my week-long Vegas work trip in September. :)
