Lemon Shortbread Squares

Base:
1 1/2 Cups all purpose flour
1/2 cup sifted icing sugar
1/2 cup cold unsalted butter, cut into chunks

Filling:
6 eggs
1 cup freshly squeezed lemon juice
1/2 cup all purpose flour
2 3/4 cups granulated sugar

You can substitute straight rice flour for this. It makes the base really short.
