Apple Ricotta Cheesecake with Cornmeal pastry crust

Choose apples that hold their shape, such as Northern Spy or Cortland. Use full-fat ricotta (10 to 12 percent butterfat) and beat it for the full time indicated to assure the perfect creamy texture.

Topping:
2 tbsp butter
2 large apples, peeled, cored and sliced
1 tbsp granulated sugar
1/2 tsp cinnamon
2 tbsp apple jelly
