Trendsetting

Having tried to corrupt as many as possible to the way of the lentil, I have now continued on my comfort food kick, and have made rice pudding for my babies, well, pudding. Daddy is hovering to make sure there is enough left for him.

Mmmm, rice pudding. I don't think I've ever made that - care to share the recipe?

I do it the speed way for my babies, which is put a handful or two of pudding rice in your pan, and boil it for a brief period, 5 mins or so, in water. Drain, add milk (full fat does taste best) and simmer gently. Add more milk as it thickens, sweeten to taste (a desert spoon is usually enough) and keep adding milk until the rice has cooked tender! Obviously because you keep popping back to stir this, my recipe is a bit random, learnt from my mother.

The oven way is from school, hence having a recipe!

1/2 oz butter
2 oz pudding rice
2 tablespoons caster sugar
1 pint milk

Grease a shallow pyrex dish with some of the butter, pour in milk, add rice and sugar and stir up well. Blob the remaining butter on top. Gas mark 2 for two hours, stir after a half hour or so, and again a half hour later, then leave to get a nice skin.

Sounds splendid! OK, my quest for tonight is to see if Sainsbury's stocks pudding rice...

I would drool but I've just licked a bowl full of snickers fragments, cheese, egg and sugar. It was suprisingly nyum.

Oh lord, white rice with full fat milk and sugar??? It would KILL his diet. But I always make too much, so he couldn't let it go to waste... Too much housework is bad for the hands, but I do need to get the hoover out, Wag spent yesterday tidying up the various piles of junk in the hall, which means you can see how dirty the carpet is!!

Yes, its fraying in the middle where they had to piece two bits together just to annoy me. Also need to hoover the boys room, as they enjoy picking up the crumbs off of the floor!

Argh! Now I'm craving rice pudding. But with raisins, or without?

Without. Peaple can sprinkle raisins, cinnamon, sugar and butter on top later if they wish, in a norwegian style!
