I originally got this recipe from a YouTube video done by a lady named Granny Karma. Today, I watched a different video called The Hillbilly Kitchen for basically the same recipe. Both have slightly different ways of making the biscuits. The Hillbilly Kitchen lady goes into more technique than Granny Karma does.
Granny Karma Version
* Two cups of self-raising flour
* Two cups of heavy whipping cream
Mix the two ingredients together until you have a somewhat moist dough that sticks together well. Roll this dough out onto a floured surface, and then cut dough into circles with a biscuit cutter. Place the rounds of dough on a greased baking sheet and bake at 350 degrees F until the biscuits are golden and smell wonderful.
Hillbilly Kitchen Version
* 2 cups of self-raising flour
* 1 to 1-1/2 cups of heavy whipping cream
The Hillbilly Kitchen lady preheats her oven to 450 degrees F. and then mixes the two ingredients together. She advises that you pay close attention to what your dough is doing.
She notes that sifted flour yields about two ounces less in flour weight than you get if you scoop it from its container and pour it directly into a bowl. If you just scoop out your flour, you are likely to need most or all of the recommended amount of whipping cream. If you sift your flour, you will likely need less cream because sifting aerates the flour. She advises adding first one cup of whipping cream to see how the dough behaves. If it is too dry, add the remaining 1/2 cup of whipping cream.
Mix the two ingredients gently until they form a cohesive ball of dough. Scoop the dough out onto a flour-sprinkled sheet of wax paper, and then gently press down on the dough to increase its area. Once you are satisfied with its thickness and area, begin cutting out circles of dough with the biscuit cutter.
To make taller biscuits, bake them with their sides touching on a baking sheet that has been covered with parchment paper. To make flaky biscuits, fold the dough up to six or seven times and then gently roll back out. You can also make drop biscuits by using an ice cream scoop and dropping gobs of dough onto the parchment.
Brush the tops of the biscuits with butter or some heavy whipping cream.
Bake at 450 degrees F for ten minutes or until golden. Makes 15 biscuits.
The total preparation and clean-up time took me one hour and 10 minutes.
