Let's see...I really love "The Handmaid's Tale" by Margaret Atwood, "Wide Sargasso Sea" by Jean Rhys (and Jane Eyre too, but I'm assuming you've already read that one :D) and "Rendez-vous with Rama" by Arthur C. Clarke (yes it's sci-fi, but it's awesome sci-fi). Also anything by Agatha Christie.
If you want something different, check out "Persepolis". It's a graphic novel, but it's really good. I haven't read it in English tbh (it's originally in French) so I don't know how good the translation is, but it's definitely worth checking out if you want to read something other than a "normal" book.
I could probably think of others, but those are just some of my favourites from the top of my head. :)
I'm planning to read a bunch of books this summer too! I haven't been able to read a book that wasn't compulsory for my English, Swedish and French classes in...like, 3 years. I'm so happy, I can actually read what I want to read now! :D :D

Ooh, Persepolis, that's ringing some bells. Was it made into a film? I've never actually read a graphic novel. I'm not sure how I'd get on with it but I'm willing to try anything once :)
I completely know the feeling. I haven't read a book I've wanted to in years either. :D Also because I suspended from Semester 2 I don't have to go back to retake it until Feb 2011 which means I have eight months in which I can read whatever I want! I honestly don't know what to do with myself! LOL
Yeah it was made into a movie a few years ago, I think it was nominated for an Oscar. I haven't seen it though. But yeah you should definitely try it; I've never actually read any other graphic novels and I liked it. :)
Ender's Game and Good Omens are my favorite books. I never read it, but if you want a book that is crazy and test you on some levels, House of Leaves I hear is great but a real mind twister.
Good Omens, of course! The amount of Supernatural fans I hear talking about this book and I always think, I really need to read that! Thanks for reminding me. I think that might go to the top of my list. :)

Ah, Harry Potter! I haven't reread any of the books since the first time I read Deathly Hallows. Good times though. I'm sure I will reread them again at some point.
