I've moved onto the next class in culinary school, I'm working on full plates, entrees, meats, starches, and presentation. I still love it, and I'm doing pretty well, except for my classical knife cuts (julienne, batonnet, brunoise, etc.) which I'm taking steps to improve ( Read more... )
