I think I finally know now what I want to do with my restaurant. I don't know the name yet, but I'm thinking I'll do a fusion of Japanese and French food. Japanese food is known for being light and delicate, with food being geared towards freshness and even being eaten raw. Go for it man. People love the whole fresh thing, and fusion food is very much the "in" thing in Seattle. In the last few months there has been a new Korean/French place, and now an Asian/Latino place. Take that dream and run with it.
