It hadn't even occured to me that one could make GF cupcakes! I'm trying to cut down on wheat (and soy) so I should really investigate that situation.

You could probably make a decent GF vegan cupcake if you used half GF flour and half wheat flour? I know that GF cakes without eggs are usually pretty gross for the most part, but I bet half and half with a bunch of egg replacer would work!
