I hardly ever share my recepes unless it's demanded of me (only because I doubt there's much interest), but this one is easy, healthy, AND delicious. How can you go wrong?
3 mushed up bananas
2c rolled oats
1tsp vanilla
1/3c canola oil
(Applesauce can be substituted for the oil- I just don't have any right now.)
optional:
1c dates or raisins (don't like em in cookies, so I don't put them in, a good substitute here is chocolate chips, but then that would ruin the healthiness of it all haha)
cinnamon and/or nutmeg (love the spices and use them in practically everything I bake)
honey (if you need them sweeter! I think the bananas are plenty sweet on their own though)
Preheat oven to 350. Mix all ingredients together. Put rounded spoonfuls on an ungreased cookie sheet. Wait 15-20 minutes- rip open the oven and enjoy the deliciousness.
I bet this can be used for any mushed up fruit of your choice (avocados anyone? :P), and it's an easy way to make begrudging boyfriends with high cholesterol eat something that's actually going to help them.
