I think this is an amazing idea. I have two copies of the textbook I used in pastry school. If I can help you follow your dream by sending it to you, I would be more than happy to do it.
Just point me in the right direction - address-wise and it will be on it's way to you, winging across the country to land in your kitchen.
Another amazing resource for you is the King Arthur Flour website. They maintain a professional kitchen and have a manned help line. Their recipes are tested and perfected and they have photo blogs to explain techiniques.
Check out joepastry.com, TheQuenelle.com, and eddyvandammeusa.com/ these are baking blogs, the first explores a new recipe each week, the second and third are the blogs of two well known pastry instructors - those I use more for inspiration.
