Okay, I still don't know what Dosha is, but http://en.wikipedia.org/wiki/Dosha seemed rather informative (if you have a degree in mystical philosophy and aren't scared by big foreign words).
Um, you know how in medieval thought there were four humours, elemental-based, that were intended to be in a particular balance in each person's body, and when they went out of whack various things went wrong with you?
Doshas are the Continental Indian version of that concept. Pitta is the "fire" dosha, and if you want to calm it down you need to eat cool and sweet things rather than spicy things.
The other two doshas, vata (which is airy) and kapha (which is watery/earthy) would also be present, just to a lesser extent. Each one has certain advantages and disadvantages, physical, mental and emotional, that go along with having it in the lead position. Ideally (according to the theory - this is all from Ayurveda) you want to arrange your diet, surroundings, etc in such a way that you take advantage of the good things about your ruling dosha without letting it go overboard and overpower the other two completely, which lets in the disadvantages.
I have been on the Pitta diet now for quite a while, I was diagnosed in 2001 with non hodgkins disease, I still get the tumors, but now I have less pain, less headaches, and more energy using this diet.
