HAPPY PI DAY

I'm actually attempting squash cupcakes today (no joke - carrots are still a no, so I'm subbing in acorn squash), so wish me luck. If you're curious about my culinary adventures, here is the original recipes. Below the cut is what I'm actually making.

More ingredients just means following the instructions more closely. And being prepared for a bigger mess in the kitchen - holy cow did I go through bowls and utensils yesterday!

I would have forgotten about Pi Day if it weren't for your post <3

I got lucky and my suitemate actually did the lion's share of the clean-up. I wish I could keep her, but she's moving out in a few weeks!

A friend of mine throw a huge Pi Day party and they ended up with about thirteen leftover pies :P They'd only bought four or five themselves, but it was evidently a participatory crowd! (The chocolate strawberry one looked like something to try making, down the road. Nom nom nom.)

Oh wow, that sounds delicious! At first I thought you were going to bake the squash first (as I've done when making pumpkin muffins in the past), but grating sounds intriguing! I hope you tell us how they turn out. :)

I take it your pureed the pumpkins before putting them into the batter? This recipe might have worked just as well if I'd done it that way, but it might also have unbalanced the liquid-to-solid ratio.

Oh no, I just meant I saw your cut-tag advertising (heh) squash cupcakes and that's what I was imagining! I've never tried grating before. But it sounds delicious and is giving me all kinds of ~ideas. *g*

I'd recommend less sweetener with things like squash and dates in the cake! It doesn't need it quite as much because they're already so sweet :)
