Baking fun! Lemon Cream Sponge

Baking and I are becoming some real friends. I find the process relaxing (is this why people like knitting) and the results are usually good.

Looks great! Can I ask, is that a butter cream?

It is actually normal double whipped cream with lemon curd in it. I really like whipped cream - nice and lighter than some options.

I have been searching for a nice lemon cake for a while now, but unfortunately I need to avoid dairy products so almost nothing works.

Oh, it must be hard. One of my friends has kids with dairy allergies, she makes cakes but I don't remember a lemon one.
