Good question. I think so, on the basis that if you buy commercial soft drinks (and I do, often) then you're paying to transport a lot of water and gas around under pressure in (often non-recycled) plastic bottles, whereas if you make it at home you get the water effectively free and the gas in bulk, and don't need bottles at all if you drink it straight away. I suppose there's the trade-off that the home carbonation widget is going to be much less efficient than an industrial one, but water is pretty heavy. I think transporting bottles of mostly water is the main environmental cost.
By whatever means, I do hope you take up soft-drink making!
I am still dreaming of the in-house made soft drink flight I had as an alternative to a wine flight with one of the best meals I ever ate - which convinced me that more people should make their own. Not that I have.
