Even if someone doesn't want to have to deal with shredding their own parmesan wedge (*cough* lazy people like me *cough*), a lot of companies that sell bags of shredded cheese offer shredded parmesan. While not as delicious as freshly shredded, it's still so much better than that powdered crap in a can.

Reducing one's own spinach is just not worth the trouble. I'll come right out and say it: it is an absolute waste of time and energy, and unless you happen to have a bunch of fresh spinach kicking around that is about two days from turning to sludge, just not worth the effort.
I tried making creamed spinach once, and although it was delicious it took easily an hour and a half longer than it should have because I had to deliberately wilt 3 lbs of the stuff. The worst part is, aside from that it was so easy! It's about six ingredients (spinach, cream, butter, shredded parmesan, chopped onions, minced garlic), and a watchful eye on a saucepan. Frozen spinach next time, for sure.

Word. I love fresh spinch for things like salad and sauteeing, or even in soup if it's thrown in at the last minute. But for dishes where you're mixing in a bunch of dairy and cooking for an hour, there's just no point.
