I made No-Peek Chicken on Tuesday night:

1c. uncooked rice
~1lb boneless, skinless chicken breasts
2 cans cream-of soups (I used chicken and celery)
2 cans of water
1/2 stick butter or margarine
1 pack onion soup mix

Put dry rice in the bottom of a 9 x 13 casserole. Lay uncooked chicken on top. Combine everything else in a saucepan and heat slightly (melt butter). Pour over the chicken, cover with aluminum foil, bake at 250 F for three hours. The name says not to peek, but peek at the two-hour mark to see if it needs more water.

It came out well, and I've been eating it ever since. Huge recipe, little me. Alternate that with PB&J sandwiches and some trail mix, and that's been my entire diet for four days. Plus green tea like it's going out of style.

Last night irked_indeed and I watched possibly the worst movie ever to star James Earl Jones; he played a delightful drunken scuba-diver, and was largely incomprehensible. The rest of the movie was in Greek. There were also nuns whom we suspected performed amazing kung-fu off screen.

Tonight I'm driving home, meeting teh_sibs, and driving again tomorrow...darnit! I have to remember to make baked beans.
