Hmmm, this whole carmelization process has me boggled. I know that carmelized apples are really good, but that is about the extent of my culinary knowledge. Congrats on the discovery......
Baked apples are better, but yes you can pan fry apples and they get a sweet crust. You are concentrating the sugar and removing some of the water. Peppers, zuccini, almost any vegitable with simple starch in it can be "sweetened" by cooking it.
(It can actually be done with white potatoes too, but takes some extra preperation and cooking steps that I forget.)
But keep anything sweet in a pan with the heat on high for too long, and the carmel will start to scortch and burn (actually instead of carmel-ization- it's actually carbon-ization)... and burned sugar is very, very bitter. Nasty bitter.
Mmm...carmelized foods! My preference is for "candied carrots"... which involves boiling the carrots, draining them off, and then adding... I think just brown sugar... and then you heat them and the brown sugar carmelizes and turns into this really awesome glaze. -to DIE for :9
