I know you are the person to ask this question! Help me impress my boss. :) He is going to New Orleans, Baton Rouge, Lake Charles, Natchitoches, and Shreveport. Advice on great eats? Probably anywhere but NO since there's tons of good food there (unless there's something really exceptional).
I could give New Orleans suggestions, but you're right, there's a ton that's good there, so for his needs there's probably no point in picking out specific places. It really just depends what part of town he's in.
Baton Rouge: Parrain's. It's seafood. Lots of fried seafood, but also some non-fried stuff with amazing sauces. He should also order boudin balls. The Chimes is owned by the same people, not as great a food selection (it's sorta sports bar-ish) but they have a good beer selection, and also serve the same boudin balls. There's an area called Town Center (corner of Jefferson & Corporate) and it has several restaurants, one of them being Zea's. He should eat at Zea's, and he should get the duck empanadas. (There's actually also some Zea's locations in the New Orleans area...that's where the chain started

OMG awesome!! Thank you so much for the time you put into this. Now I really wish I was the one going on this trip... I would just eat my way through Louisiana!
