I store my vodka in the freezer and it doesn't freeze, probably same reason why your ice cream isn't freezing too well. Instead of using creme de menthe, maybe peppermint extract?

My favourite PC ice cream is still the candy crane crackle one. sadly it's only available Nov - Dec.

Why must there be so many delicious things that are so bad for us??
And, I have made ice cream with peppermint extract, but it's different without the creme de cacao as well as the creme de menthe. There must be a way though, if Carl was able to consume some in San Fran. It's probably a cooked ice cream, so the actual alcohol cooks out; I can't think of any other way for it otherwise.
