Did the glucose test today. I did okay with the fast, probably because of the enchiladas for lunch that I'd made a couple of days ago. They were really grounding. They were full of refried beans and corn, and of course the corn tortillas were totally satisfying. Those look GREAT. I have yet to master the art of Mexican food. Which annoys me as I am from the border and whatnot.

These are pretty simple, I'm happy to say. They are just a little time consuming because I soften each tortilla with a little oil on a frying pan before rolling them up with the filling inside. I buy a canned sauce, so that saves some time. No matter how good these taste right out of the oven, they are always ten times better as leftovers. I think it's because the sauce has had time to seep into the tortillas. Let me know if you want all the details and I'll tell you how they're made.

I am in a total food rut so any new sources of inspiration would be happily accepted!

The first time I made enchiladas with corn tortillas, I did not soften the tortillas in oil -- they seemed so soft already, you know? Well, that was disastrous. At least I learned my lesson.
