Last week I made the Hemp-Apple Muffins from Vive le Vegan! (p. 30). I substituted Oat Bran for the ground oats and I added about a half cup of mini chocolate chips. Wow, they were delicious! I almost always ruin the second batch of whatever new thing I'm making. I hope you won't experience this, but let me know if you do!

I think it's because my attention to detail slips a bit and I also become a bit more relaxed about the process since I believe I'm familiar enough to wing it, when experience has proven that I'm simply not.

Happily, they still turned out really good, but not as awesomely good as the first batch. That is exactly what happened, I think. I got too confident! :) I should start sharing these around instead of overdosing myself. Want one?

I love the blueberry muffin recipe in Vegan with a Vengeance. If you don't have that cookbook and want the recipe, let me know and I'll copy it out for you.

There is a "muffins that taste like doughnuts" recipe in Vegan Vittles -- I've found that when chocolate chips are added they make the best chocolate-chip muffins (dessert, really). Same as above -- I'd be happy to copy it out.

The Garden of Vegan had a fantastic banana-nut muffin recipe. I got it from the library and took a photo of the recipe before turning it back in, and now can't find the photo. Duh! But if you happen to have that book, or if the library has it ... That was a good muffin.

A couple of weeks ago I made the Vegan Vittles "muffins that taste like doughnuts" one, but without the chocolate chips.

We do have Garden of Vegan, but I haven't tried the banana-nut but I do have some bananas right now. Once they are ripe I'll give that one a shot.

We don't have Vegan with a Vengeance. I'd love the muffin recipe if you have time, thanks! Blueberries are among my favorite foods of all time.

Hopefully I will get that done tomorrow. I am crazy tired right now (and have been all day). They are super yummy! If I weren't so tired I'd whip up a batch now.

Where's the food porn? ;o) The muffins sound yummy. I don't do much sweet baking, maybe one of these days. We bought a nice large bag of Dutch cocoa powder from People's - so maybe one of these days.

I know, I wanted to take a picture but I just didn't get around to it. Still could happen, though! The nice thing about these muffins is that they are sweetened with maple syrup and the only sugar is whatever is in the chocolate chips. Yet they are so good!
