You are taking french, so it shouldn't be hard for you to remember that 'essay' is a verb as well as a noun. I like to think it's not so much trying to produce an expression of your beliefs as trying out an argument. Assaying its worth. You don't have to agree with what you write, you just have to give the argument you choose a decent chance to convince someone else. Worry less about picking the right thesis than about giving some thesis your best shot.
In true cases of thesis-induced writers block, I recommend giving up beleiving your argument at all. Go big, go snarky. Devils advocate is easier to write and will usually get you a B+.
Much as you'd love to believe school is all about the worth of the intellectual challenge of every assignment, it's also very much a test of your time management and ability to produce on command. This, as you've learned the hard way many times, is often the more salient attribute outside school, too.
