Can all of you good folks who like food and cooking recommend me some recipes or things I can do with two dinosaur-sized zucchini? Let's rule out anything obscene right now. Sticking it where the sun won't shine will only make the zucchini rotten ( Read more... )

There's another one you can do where you slice up the zucchini into medium-chop size, then fry it in oil with onion, garlic, and green pepper. Then add a couple beaten eggs and slowly let it form like scrambled eggs (keep stirring). One of my favorites. Add salt and pepper to taste.

One more. Sautee with various other veggies in a combo of EVOO and butter, then dump the whole thing onto your favorite pasta.

Thanks! I was just thinking about how delicious zucchini is, and was trying to think about what veggies I'd like to fix with it, when I stumbled on this recipe.

One of these days, I'd like to make some stuffed tomatoes or stuffed peppers, maybe. When I was an exchange student, my French host mom made stuffed tomatoes all the time and they were SO DAMNED DELICIOUS!

We used to do stuffed tomatoes with white onion, crumbled beef or soy crumbles for me, a type of mexican cheese that escapes me, and parmesan on top.

So, I have this all purpose curry recipe that I kinda combined/altered from a few different places and I use it all the time cause it's easy and I got it memorized. I've only cooked it vegetarian with mushrooms before but maybe you'd be willing to try? I think the tomatoey base would be really awesome with the zucchini ( ... )

Neat!! I hope it works. Like I say, I've only ever done mushrooms as the meat substitute and they tend to hold their texture better than green veggies, you know? But, best of luck!

Seems like a logical substitution for pasta although the consistency seems a little bizarre (not as soggy as a pasta noodle). But a marinara-type sauce drapped over zucchini would be tasty nonetheless.
