Maybe vegetarian exchanges for meat aren't supposed to be equivalent in protein content, but rather in calories? It's very unlikely for a meat-eating American to be short of protein, even in pregnancy. (I know protein intake has an effect on carb metabolism, but that's more complicated than exchanging gram for gram anyway.)

Yes, I do suspect that it. And probably why 5 oz of chicken is equivalent to one egg and two egg whites (which is equivalent to 2 oz of meat according to the USDA food pyramid). But I wonder if she realized I'll virtually never choose "5 oz of lean meat" and that it will always be beans, or the eggs, or peanut butter, and whether knowing that would have changed the plan.
That would give you something else to tweak if this diet doesn't do all it should. That is, work on the protein/carb exchange and balance, not eat more meat. :)
