Banana Nut Bread
1/3 cup - shortening or butter (use the stick of butter, it has cup measurements)
3/4 cup - sugar
2 eggs
1 3/4 cups flour
1 teaspoon - baking powder
1/2 teaspoon - salt
1/2 teaspoon - baking soda
1 cup - mashed banana or 2-3 bananas - mashed
chopped nuts (peanuts or walnuts or whatever nut you have)
Preheat oven to 350 F degrees, and grease bread pan by putting a little oil in pan and spread oil with papertowel and wipe the inside of the pan (bottom & sides).
Instructions:
In a large bowl, cream together butter and sugar (mix until creamy); add eggs and beat well. In a separate bowl, mix together flour, baking powder, salt an baking soda, then gradually pour into the butter/sugar mixture; stir until all ingredients are mixed well. Stir in mashed bananas (you can add a little of the nuts and/or you can just put nuts over the bread) and mix it well.
Pour the mixture into greased bread pan (you can sprinkle some nuts on the top of mixture) and then bake in oven at 350 F for about 50 minutes. When done, (it will be very hot so use kitchen mitten) let it rest and cool down then remove bread from pan. (You can try to turn it upsidedown but make sure to hold or secure the top part of bread with mitten while turning it upsidedown with other hand so it doesn't just fall).
Baked Chicken
Ingredients:
1 whole chicken or quarter legs
salt
pepper
Accent seasoning (optional)
aluminum foil (optional)
Preheat oven to 350 F degrees. You need a baking pan big enough to fit a whole chicken, or for quarter leg you can use a cookie sheet pan if you do not have a baking pan. But if it's just for one person, just buy the chicken quarter legs pack. The pack usually has 4 - 5 pieces of quarter legs and when you bake you can just bake one quarter leg for yourself and freezer the rest for another time. Line the inside of the pan with aluminum foil so that you don't burn or ruin your pan.
Wash the chicken well with water, then place in pan and sprinkle salt and pepper all around the chicken (you can also sprinkle Accent seasoning which helps blend the salt&pepper but you don't really need it).
Make sure the oven rack is situated in the middle of the oven and place your pan with chicken in oven. Bake the quarter leg chicken for at least 1 hr (whole chicken at least 1 hr & 50 min). The chicken should be done when the skin is golden brown and when you cut the thickest part of the chicken the juice coming out should be clear and not pinkish or the meat nearest the bone is not pink, that way you know the meat is well cooked.
Gravy (hamburger or chicken)
Ingredients:
2 tablespoon - Flour
1 stick - butter
Dash of salt or garlic salt
Soy sauce (toyo)
1- 2 cans of chicken or beef broth
or 1- 2 chicken or beef bouillon cubes
1 - 2 cups water (for bouillon cubes)
Instructions:
After frying hamburger in pan, use the same pan with hamburger drippings to make gravy. Put the heat to medium low and melt butter in frying pan. When the butter has melted, sprinkle 2 heaping tablespoon of flour on butter and mix well until it has a paste consistency (using a wooden spoon to mix works well). Pour 1 can beef broth slowly and constantly keep mixing broth and flour together until you get the consistency of gravy. It will start to get thick as soon as the broth mixes with flour but slowly add more broth to thin out the gravy. Once you have the right consistency you can add a little soy sauce to darken the color (remember soy sauce also adds a salty flavor too) and taste first before adding a little dash of salt or garlic salt.
If you bake a chicken, you can use the drippings by pouring it into a sauce pan and then following the instructions above starting with the melting of butter...etc. but use chicken broth instead of beef broth in chicken gravy.
