i didn't think i liked squash, but apparently i do!
Butternut Chowder with Smoked Salmon
1 lb butternut squash, peeled and cut into 1/2 cubes
14 oz can of reduced sodium vegetable broth
1 large white onion, chopped
1/2 t dried rosemary
1/4 t white pepper
15 oz can of cream-style corn
1 c frozen corn
8 oz smoked salmon bits
1/2 c 2% milk

just the other day, i grabbed 4 different kinds and did em up like that... Blue Kuri (smelled like a melon when i openned it up... taste was mild, but Lia liked it best)... White Acorn (similar taste to one of my faves, the Acorn Squash, but a little milder... soft but semi-crunchy if that makes sense...)... Golden Nugget (small with inedible skin, somewhat sweet soft flesh, lovely color)... and Carnival Squash (skin multicolored flecked... hard, possibly edible but i just ate the flesh which of these 4 was my favorite... had a lovely sweetness, didn't need anything added)

i can probably figure out the steps and flavorings with a little trial and error, but essentially it was:
acorn squash
chicken stock
cream
fresh sage leaves (cooked in butter until they slightly crisp and the butter browns)
the browned butter from the sage
salt and pepper to taste
not sure the measurements, but you cook the squash in the stock then blend it to a thick puree and add the cream bringing it back to heat... pouring the butter and crisped sage leaves over the top and stirring lightly, not to combine
served with a dollop of creme fraiche atop

I'm about to put together a butternut squash and caramelized onion galette. I made the filling last night, and just need to roll out the dough this morning.
