As cool as Stein is, I think Neuro would pull out the win. He's had plenty of experience beating people who want to dissect him, and Stein's soul-viewing abilities probably won't be of any use, as it's doubtful Neuro has a soul to speak of.

Also, the question of Stein's sanity may carry the flavor of a delicious mystery. :D
